Notes: I've got a lot of gluten-free flours to use up, so I'm back to baking out of this book. This carrot cake is simple to make, and pretty tasty. It's crumbly, of course, but still delicious. I made a half batch of the cream cheese frosting which covered the 8" cake nicely.
