Chocolate-Stuffed Oatmeal Cookies
For a quick snack and thank-you gift, I made these filled cookies one evening. Straight out of the oven, they were gooey and delicious, but dried out and got firm later.
The recipe is just an oatmeal cookie batter that you use to sandwich a ganache filling. I followed one of the reader comments, and instead of using making a sandwich, I just used one ball of dough and one piece of ganache to make smaller filled cookies.
These turned out better than I expected. I was anticipating leakage, but almost all of the cookies held their contents within. The ganache centre is barely visible so it’s a pleasant surprise to discover the interior. I’m not sure why these cookies didn’t taste so good a few days later, but maybe a few seconds in the microwave would have refreshed them.
