Miso Walnut Double-Thick Chocolate Chip Cookies

Another cookie we tried out of Nicola Lamb’s Sift was this sweet-salty treat, inspired by the gigantic cookies from Levain in New York. Incidentally, this Modern MBA video about the economics of cookie retail businesses like Crumbl, Levain, and Mrs. Fields was very interesting.

Anyway, the recipe starts with making miso walnuts, a candying process using mirin, sugar, and miso. These get stirred into the thick batter. Each dough ball is supposed to be 180g, which is insane. I made 90g cookies and they were still huge.

I liked the saltiness of these cookies but found their texture a bit dry. But everyone else thought these were worthy of making again.
