Brown Butter Banana Cookies
Dr. S got me Nicola Lamb’s debut cookbook, Sift from the library. I had heard about from someone at work, about how it’s very science-y. Flipping through it, I loved all of the interesting flavour combinations, using flowers and herbs, and some savoury crossovers. The photos are also gorgeous and colourful.
The first thing I tried was this banana cookie. The recipe calls for rum-soaked raisins, but I caved and did it with dried cranberries instead. The only fussy thing to make is browned butter.
I personally don’t think banana belongs in a cookie, so my highest praise for these is that they are nice and soft. But everyone else, include kids, seemed to like them.
