Buttermilk-Biscuit Shortcakes With Strawberries
One of Dr. S’ favourite summer desserts is strawberry shortcake. This particular version, from one of my favourite bakers and authors, was a real winner.
The recipe is by Dorie Greenspan and appeared in her first column for the New York Times Magazine. A unique aspect of it is the preparation of “saucy berries”: a pound of berries softened in a syrup made from herbal tea, citrus zest, and sugar.
Lemon zest features in the biscuits, as well as both buttermilk and butter. They were flaky, tender and very delicious, warm out of the oven.
This was a quick, post-dinner dessert, and I found it pretty easy to make. Five of us ate every last crumb, dollop, and seed! Highly recommended.
