Notes: In a mad dash before going on vacation, I took the contents of my fridge, and prepped the following items for the freezer:
- the juice of half a dozen lemons
- a pile of chard and spinach, blanched and chopped
- a soup of carrot, sweet potato and miso
- this loaf
Lemon and blueberries are one of my (and a lot of other people's) favourite combinations. I love the pairing in a tart, muffin, coffee cake or waffles.
This loaf is a no-brainer to make and is an excellent breakfast or snack treat. The lemon syrup drizzled on top really made it for me, but I skipped the icing on the cake. Leftover slices froze nicely and were delicious warmed in the micro.
