Easy One-Bowl Coffee Cake

While coffee cake can be pretty plain, I had another surplus of Greek yogurt to save from the compost. This turned out to be a pleasant surprise, with a moist flavourful cake, topped with a nutty, fragrant streusel.

That delicious topping is made with whole wheat flour, and both cinnamon and cardamom. It will seem like you have too much, but trust me, you definitely want all of it.

Because a 9x13” cake is a lot of cake, I cut the leftovers into squares and froze them. I can now zap a piece for an afternoon snack anytime I need a little treat.
