Perfect Blueberry Muffin Loaf
Seeking to use up the Costco Greek yogurt in the fridge, I landed on this Smitten Kitchen recipe for a loaf cake that sounded wonderful. In an uncharacteristic move, I even kept the sugar sprinkle topping.
This is a very straightforward recipe. It uses melted butter, so no need to get out your mixer. Oddly, the directions call for sprinkling the leaveners on top of the combined liquid ingredients. I didn’t do that, and whisked those into the dry ingredients instead.
While yummy, it’s no better or worse than any other lemon blueberry muffin or loaf I’ve made. Having slices of this in the freezer makes for a great breakfast treat or snack.
